Ingredients
- 2 large eggs (the fresher, the better for easier peeling)
- Salt and pepper to taste (be generous, we're fighting sugar here, not flavor)
Instructions
- Place eggs in a saucepan and cover with cold water by 1 inch (starting with cold water prevents cracking).
- Bring to a boil over high heat (watching water boil is not actually as boring as they say when you're having sugar withdrawals).
- Once boiling, remove from heat, cover, and let sit for 9-12 minutes (9 for medium eggs, 12 for large eggs – set a timer or you'll forget).
- Transfer eggs to an ice bath to cool (the thermal shock makes them easier to peel).
- Peel and season with salt and pepper if desired (or get fancy with everything bagel seasoning).
