Ingredients

  • 6 large eggs (that's half a dozen for the mathematically challenged)
  • 1/4 cup unsweetened almond milk (not that sweetened nonsense masquerading as health food)
  • 1 cup spinach, chopped (green stuff is good for you, embrace it)
  • 1/2 cup mushrooms, sliced (fungi are friends, not food... wait, they are food)
  • 1/4 cup red onion, diced (morning breath be damned)
  • 1 tablespoon olive oil (the good stuff, not the sketchy bottle you've had since college)
  • 1/4 teaspoon dried herbs (thyme, oregano, or Italian seasoning – dealer's choice)
  • Salt and pepper to taste (be generous, we're fighting sugar here, not flavor)

Instructions

  1. Preheat oven to 375°F (190°C) (yes, you actually need to preheat, don't be lazy).
  2. Heat olive oil in an oven-safe skillet over medium heat (cast iron works best and makes you look like you know what you're doing).
  3. Add onions and cook until softened, about 3 minutes (they should be translucent, not brown and sad).
  4. Add mushrooms and cook for another 3-4 minutes (until they release their water and start to brown).
  5. Add spinach and cook until wilted, about 1 minute (watch it shrink like your will to live without sugar).
  6. In a bowl, whisk together eggs, almond milk, dried herbs, salt, and pepper (put some muscle into it).
  7. Pour the egg mixture over the vegetables in the skillet (it should sizzle satisfyingly).
  8. Cook on the stovetop for 3-4 minutes until the edges start to set (no touching, just watching).
  9. Transfer the skillet to the preheated oven and bake for 10-12 minutes until the frittata is set and slightly puffed (it will deflate after, don't panic).
  10. Let cool slightly before slicing and serving (or burn your mouth, we're not your mom).
